Ingredients

  • 450g chicken thighs, minced or finely chopped
  • 3 tablespoons vegetable oil
  • 6 cloves garlic, minced
  • 4-6 Thai chilies, finely sliced (adjust to taste)
  • 1 cup holy basil leaves (or Thai basil)
  • 1 red bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • 2 tablespoons oyster sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon dark soy sauce
  • 2 teaspoons sugar
  • 2 tablespoons chicken stock or water
  • Fried eggs for serving (optional)
  • Steamed jasmine rice for serving

Instructions

  1. Prepare all ingredients before starting to cook as this dish comes together very quickly.
  2. Heat a wok or large frying pan over high heat until smoking hot. Add the vegetable oil.
  3. Add the minced garlic and chilies, stir-fry for 30 seconds until fragrant.
  4. Add the minced chicken and break it up with your spatula. Stir-fry for 2-3 minutes until the chicken is cooked through.
  5. Add the sliced bell pepper and onion, continue to stir-fry for another minute.
  6. Add the oyster sauce, fish sauce, soy sauce, dark soy sauce, and sugar. Mix well to combine.
  7. Add the chicken stock or water to create a bit of sauce.
  8. Turn off the heat and stir in the holy basil leaves until they just wilt.
  9. Taste and adjust seasoning if necessary - it should be savory, slightly sweet, and spicy.
  10. Serve immediately over steamed jasmine rice, topped with a fried egg if desired.
